Quick ‘N Healthy Recipe

Easy Frittata (3 servings)

250 grams lean ground beef

1 tblsp butter

2 cups sliced mushrooms

1/2 onion, chopped

2 tsp Worcestershire sauce

1 tsp ground oregano

1/2 tsp garlic powder

1 tsp salt; 1/4 tsp black pepper

1 tsp dried parsley

2 cups chopped fresh spinach

4 large eggs

1/4 cup low fat milk

1/2 cup shredded parmesan cheese

Spray a large skillet with cooking spray.  Add gr. Beef, butter, mushrooms, & onion.  Cook 6-8 min.  Add worcest. sauce & seasonings.  Add spinach.  Push mixture to one side; reduce heat.  Beat eggs with milk and pour into skillet.  Let set.  Stir into meat mixture; add cheese.

325 Calories, 4g net carbs, 33g protein per serving
